Lasagna with spinach, tomatoes and walnuts
For 4 persons (1 large dish or 2 small)

[INGREDIENTS]

Lasagna (approx. 24 plates)
450 gr fresh or frozen spinach leaves (whole)
200 grams chopped walnuts
1 large chopped onion
2-3 cloves chopped garlic
3 tbsp. olive oil
1 can of peeled / chopped tomatoes
2-3 Tbsp. ketchup
salt
pepper
nutmeg

150 gr grated cheese (eg. Mozzarella, Emmental or Red Cheddar)
About 1 ½ fl. "Cremefine" for cooking (like 7%) or coffee cream

150 gr grated cheese (Mozzarella, Emmental or Red Cheddar)
2 tbsp. grated parmesan
1 tbsp. breadcrumbs
A little olive oil

[HOW TO...]

Spinach / tomato / walnut filling:
Olive oil is heated in a saucepan. Fry the chopped onion and finely chopped garlic briefly (do not brown). Add walnuts and sauté for a moment. Add the peeled tomatoes (including moisture) and spinach (if the spinach is frozen stir until it is defrosted.) Add the ketchup and season with salt, pepper and a tint of grated nutmeg. Let it simmer for a few minutes.

Layer-by-layer:
Add a bit of filling at the bottom of an ovenproof dish and cover with a layer of lasagna plates. Apply a thin layer of filling on the lasagna plates, sprinkle with a little cheese and ad a little "Cremefine" (or cream). Cover with a layer of lasagna, then a thin layer of filling, sprinkle with cheese and ad "Cremefine" (or cream). Continue these layers until the filling has finished. Finish with the filling.

Sprinkle grated cheese (150 gr) over the entire dish. Mix freshly grated Parmesan cheese with bread crumbs and sprinkle over the cheese. Sprinkle with a little olive oil.

Bake in oven at 210°C (on the middle shelf) for approx. 25-30 min.

Eaten with a delicious Italian bread and tomato salad (sliced, frsh tomatoes, slices of fresh mozzarella, freshly chopped basil leaves, a tint of olive oil, salt, pepper) or mixed green salad.

ATTENTION! It is solid diet, and there is more than enough for 4 persons in the above recipe. If dinner is for 2 people only, then half the recipe is more than enough, unless you want to eat cold lasagna the next few days ...!
